Any mountain bike can be converted by putting on slicker, less wide tires. Simple.

You may want to look at a comfort/path style bike. Knobby tires are a pain on the road.

Your looking at a high dollar cross country bike if you want it to be good, trek makes a big number of these, so does specialized

It will perform well on flat surfaces especially if you can lock out the suspension. It won't be as good as a road bike on the road of course but if you are going to ride on the road to get to trails like me it'll be fine.
